Day 2

Coffee at hip coffee roastery nearby, serving a selection of carefully brewed delicious coffees

Walk through the old samurai part of Kanazawa and visit a beautiful old house and traditional gardens

Modern, yet traditional sushi course lunch at a beautifully elegant small sushi shop offering an intimate experience using pristine local fish

Visit a few museums depending on areas of interest

Rest and chill at the hotel

Dinner at local hunters spot or top yakitori place, depending

Day 3

Return to the cool coffee roastery for morning coffee

Pick up rental car at Kanazawa Station and drive to Nanao

Delicious teishoku lunch featuring local dishes lightly (imperceptibly) seasoned with local fish sauce and rice that has been cooked outside in a large iron cauldron over a large wood fire

Visits may include: a local fish sauce maker, an artisanal shoyu maker, and a traditional Japanese candle maker, the last Noto blacksmith, and an artisanal charcoal maker

Dinner and stay at a drop dead gorgeous wabi-sabi inn surrounded by maple an sakura trees in the front and a bamboo grove in the back. The food here is thoughtfully created using the local Noto ingredients - the complement of dishes are meant to feed and soothe your soul rather than over satiate. Unusual and incredibly special
